Linux server 12.04

Hi i'm totally new at a linux server 12.04.
I've allready completed a tutorial in how to make a fileserver using ajenti.

Now i was thinking if it's possible to place 2 linux fileservers in 1 computer.
So 1 HDD with a linux fileserver and a 2nd with also a linux fileserver.

And then i can switch between these 2 HDD's.

Is this possible, if this possible -> How ? :)
