My thoughts:

1) You spend too much money on your cooler and motherboard. You could easily cut $150 off your price with those items and put that into better performance parts like your CPU/GPU. Water cooling is only for people who can't reach that kind of performance without it, and so long as the motherboard has the features you're using, you're fine. You don't need to pay for features you aren't going to use. Motherboards don't have "performance" numbers, just a featureset.

2) Caviar Blacks are great if its your main drive, but it would be better to get a regular caviar blue or green and put the money to a larger SSD. You don't really need the higher read/write on your secondary drive since you have an SSD.

3) You don't need that PSU. Efficiency only matters if you're running a 24/7 server farm, and you don't need a modular PSU in that big case since you have more than enough room to hide the cables. Plus it's a 750w PSU and you're only using around 375

4) Windows 8 > Windows 7. Sorry. They're virtually the same, except Windows 8 has slightly better time slicing for CPU usage, and is more likely to be better supported in the future. There's no downside unless you're just not a computer person, but since you're building your own machine I think we can rule that out.

5) Don't spend that much money on case fans. It's a waste. Get the cheaper fans and use your MoBo's fan settings to run them at less than full speed so they aren't so loud. Voltage control fans (3-pin) are perfectly fine.

6) You definitely want either a higher resolution IPS panel, or a higher framerate TN panel at this price range. Since you're editing and stuff, go high resolution IPS. Otherwise you're wasting your GPU's horsepower. No sense in being able to render 100 frames at 1080p if your monitor limits you to 60. If you don't want to spend more on a monitor (which will probably last longer than the computer), then consider a cheaper GPU like an R9 290. You don't need a GTX 970 if you're only running a 1080p 60hz display.

Here is a build, because you are going to render, instead of an i5, i out a Xeon E3, cheaper than the i7.

Again, like most said, the PSU is way too overkill

For rendering 16GB of RAM is recommended

CPU: Intel Xeon E3-1231 V3 3.4GHz Quad-Core Processor  ($249.98 @ SuperBiiz)
Motherboard: MSI H97 GAMING 3 ATX LGA1150 Motherboard  ($118.99 @ Amazon)
Video Card: MSI GeForce GTX 980 4GB Twin Frozr Video Card  ($586.13 @ Newegg)
Case: NZXT H440 (Black/Red) ATX Mid Tower Case  ($109.99 @ Micro Center)
Power Supply: EVGA 500W 80+ Bronze Certified ATX Power Supply  ($47.76 @ Amazon)
Operating System: Microsoft Windows 8.1 - 64-bit (OEM) (64-bit)  ($90.26 @ OutletPC)
Monitor: Acer H236HLbid 60Hz 23.0" Monitor  ($149.99 @ Best Buy)
Keyboard: Corsair Vengeance K70 Wired Gaming Keyboard  ($129.95 @ Newegg)
Mouse: Corsair Vengeance M95 Wired Laser Mouse  ($59.99 @ Amazon)
Total: $1845.04
Prices include shipping, taxes, and discounts when available
