I recently built my dad this basic computer for work:

http://www.tigerdirect.com/applications/SearchTools/item-details.asp?EdpNo=9134084&CatId=11515

However, when I opened HWMonitor this morning, at idle, the temperature of the processor was jumping around between 60 and 80 C. It was actually a lot worse last night as it was jumping between 80 and 105 C. Is there something wrong? I'm using the stock AMD cooler, however, the case did not come with any chassis fans, so the only fan in the case is the AMD stock cooler. Is the lack of fans contributing to the high temps or is it something else?

Try using Aida64 or AMD Overdrive to monitor... HWMonitor doesn't really play nicely with AMD CPUs...
