So power supply stays on yes?

Yes, your PSU and  your ram stays active as all of the open programs are stored on ram

I have a question about sleep mode in Windows 7. Because when i am using it , my computer just turns off HDD, turns off monitor and turns off both case fans. So question now. Is PSU turning off too? Because i am hearing one single click from PSU ( like turned off ).

The power supply consumes what the computer consumes as power. If you have 1000W power supply, and you computer only consumed 5W, the power supply will consume 5W (if we ignore efficiency measurement due to current conversion).

Technically the motherboard is still powered when on sleep, but goes in a lower power state when you put the system to sleep. In fact, some components are actually powered, but goes in super low power state, this to have a fast resume process when the system wakes up. This is more true with Windows 8, where wireless card is not turned off, but goes in deep sleep mode instead, so that you can reconnect to a wireless network 'instantly' when you wake up the system. And even more so, in Connected Standby compatible systems, where Windows will start collecting software calls to get stuff from the web, while the system is in sleep by software, and when it piles up, it will power the system in part, fetch the info, and go back to sleep. Basically, like how a smartphone works when you hit the power button (put the device to sleep).

It depends how you wired your system, and how your power supply works. Normally, the PSU knows that the computer is at sleep (the system sends a call to it, part of the ACPI standard), and only the motherboard is CPU ATX power connector is powered.
