How many watts do I need with this setup?:

CPU: Intel Core i5 4690K

GPU: Asus GTX 780Ti SLI

RAM: Kingston HyperX Fury 8GB sticks

Mobo: Asus Maximus VII Hero Z97

Storage: 1 x Samsung 840 EVO SSD + 1 x Seagate barracuda drive

Which PSU should I get?

AX 860i or AX 1200i?

if you're putting these under water, 1kW might not be a bad idea (certainly not 1.2kW), but in all cases 850w should be ample.

You should be fine with a AX 860i.

You could even get by with 750 watts, but get at least 850 for good measure. The list of powersupplies that @helping listed should be good.
