Yesterday I was updating quite a few drivers, and when I went to restart my computer, I got the windows update screen. I thought this was weird because I have windows set to not auto update, and I had not given my computer the "go ahead" to update windows. Nevertheless after leaving my computer on all night It is still stuck. (only reason I havent unplugged or turned off is the message "do not turn off your computer")

Did you try to update all the drivers at once? You can't do that, most of them will fail. Do them in small groups of 5-10 at a time and see if that works better.

do a system restore and then update all the drivers individually

How many drivers did you try to update?  If you tried to update around ten drivers at once, chances are the installation process for those drivers has a conflict somewhere.  It's kind of a tough call.  It usually is not a good idea to interrupt any sort of update process.  Doing so could potentially corrupt your operating system making your computer unbootable.  I'm not sure what advice to give here as far as getting out of the update process.  Doing a system restore would require you to at the very least shut off the computer during this update phase.

Yes, it was around 10 drivers :o. I am getting an ssd in the mail soon enough, so I am not too worried about corrupting windows becaus I will be doing a fresh install on the ssd. so... just try shuting it down and restore if nessasary?
