so i have this asus p8z77 ws mobo and 6 fans 3 of which are 3 pin and 3 of which are 4 pin, now it is my understanding that i should be able to control all of these through the UEFI but the 4 pins should offer a little more control than the 3 pins. if i'm wrong on that feel free to correct me. anyways when i had one of the 3 poin fans connected to the "CPU optional" header on the board it would not show up in among the other fans but when connected to any other header it would become visible. however if i plugged any of the 4 pin fans into the CPU optional header it would show up. any ideas of why this might be?

also the 3 pin fans don't seem to listen to the speeds i tell them to run at as well as the 4 pins do. i hope i'm right in assuming i can adjust their speeds since i would think its only a matter of the mother board applying more or less voltage depending on what i tell it i want.

On a 3 pin connector you have a: 

negative pin

positive pin

ground pin

 

On a 4 pin:

negative pin

positive pin

ground pin

voltage controller pin

 

 

Voltage controls how fast your fans spins.

 

However you plugged a 3 pin fan into a 4 pin header. When you did this it will not show up because the 4th pin (the voltage controller) is not being used. 

When you plug in a 4 pin fan, the voltage controller is being used and it will show up.

 

The 3 pin fans will not listen to what speed you tell them because they do not have a voltage controller to control the speeds. Only 4 pin fans do.

This explains why you haven't been able to control your 3 pin fans, and/or why they haven't shown up.
