One thing, I like to unplug my desktop after use, so on a daily basis. Will the selftest stress the PSU if done on a regular basis?

I don't think so. Only thing that could be stressed are fans since they will be going full rpm during first 2-3 secs of boot sequence. I used to disconnect my old system too and most of those parts are still in use (build -08).

I have noticed that my PC will turn on, not display anything, turn off and then turn on again, this time displaying video as it should. This only happens after it gets disconnected from the mains.

My guess is that it is some type of check, but I want to be sure. Open to any suggestionz.

Its normal PSU selftest. Besides happening during cold boot (when cord is disconnected or switch flipped) it happends also after you have just overclocked and PSU needs to check how much power you need. It normal and shouldn't worry over it.
