I'm new to jailbreaking and I don't know which one to do. There's redsn0w, evasi0n, and evasi0n7 (rip-off of evasi0n perhaps?) I have an iPhone 4s on iOS 7.1 so which one do I do? Are there other jailbreak websites that are trustworthy as well?

I dont think it really matters i use to use redsnow back in the day but last time i jailbroke was probably in the 5.0+ days.

Edit: also make sure the jailbreak program works with the firmware version on your phone and your actual phone version ive never really heard of there being more than one program to jailbreak for a single firmware version.

There is no jailbreak and most likely there won't be because 8 is around the corner. The last exploitable version is 7.0.4 using Evasi0n
