Not entirely sure what you're asking, but a dual-channel setup is faster, as it allows the RAM to run in sync. The 1600MHz is just because it's a faster clock speed, so data is transferred more quickly. And 8GB is a good amount to have with today's apps and games.

Most games don't take advantage of more then 8GB of RAM or RAM speeds faster then 1600MHz.   if you were Video editing then more RAM would be useful and so would something like an i7 cpu because of Hyper Threading. (different subject though)
