What country are you located, what is your budget and are you reusing any components other than your psu?

Do not go with an Intel cpu. I suggest choosing an AMD Ryzen 5 7600X which would match that 5070 really nicely. This combo should easily last you for several years down the line.

Read the OP and look at what the PC will be used for.

If you do decide to go with the 14600K, I would highly recommend not getting an H610 motherboard.

First, H610 boards do not support memory overclocking, which means you will be limited to the official spec for the CPU, which in this case is just DDR5-5600.

Second, H610 boards are unlikely to have the VRM quality necessary to run the 14600K at its full speed. It will probably have an enforced power limit of 125W at best. Some force a 65W long duration limit, which will definitely hurt the performance. Even if the board permits running without power limits, its VRMs will likely throttle after a short time, resulting in inconsistent and poor performance.

I'd get a 265K rather than the 14600K for long-term use. It has seen a lot of discounts, so hopefully you can get one at a reasonable price.

If you intend to stick with H610, I'd only recommend something like a 14400.

2x16GB DDR5-6000 CL30. Look for a board that supports PCIe 5.0 for the graphics card.
