I currebtly have a 250gb Samsung 970EVO.  I believe this would have been gen 3?

After a 500GB replacement and was looking at either Cruscial T500 or WD Black SN770

Will I notice a speed difference between my old drive and a new drive and if so which should i buy?

In synthetic benchmarks? Yes.

In the real world actually using it for booting/launching applications? Absolutely not.

I have two SN770's (1TB and 2TB) and have zero complaints.

Ryzen 7 7800x3D -  Asus RTX4090 TUF OC- Asrock X670E Taichi - 32GB DDR5-6000CL30 - SuperFlower 1000W - Fractal Torrent - Assassin IV - 42" LG C2 - Windows 11 Pro

No, not really, unless you really "stress" and use that storage in some way or another.

Even gaming isn't that demanding really.

Are you thinking about buying a 500GB M.2 or 1TB M.2?

You can get a 1TB Crucial P3 Plus for around the same price as a Crucial T500 500GB. No point these days in going for a 500GB Nvme, when 1TBs are so inexpensive.

T500 is better, but prices for 500GB ssd are horrendous expensive, even the 1TB are not cheap, in my country 2TB ssd are the best value per GB right now.
