I have recently rebuilt an old desktop I had lying around and intend on initially running it as a nas, it's a Ryzen 1700 on an Asus crosshair vi with a m.2 ssd, this is way overkill for my current use, who's is synching/backing up a game project I'm working on between my desktop and my laptops.

I'm trying to reduce the power consumption, my first thought is disabling some cores / ccx, turn off additional functions like RGB, onboard audio, most (if not all) usb hub/ports and what ever else I can find to just switch off.

However I have limited experience with under clocking/undervolting, I did a bit of this with my GPU for crypto mining a few years back but that was all of 3 sliders. Is there any helpful sites/videos to help me understand the 100's of different settings that I could use to reduce power consumption?

I'd get a wall power meter to see how much your using. Cores should be basically off at idle. Lowering max clocks and voltage can help a bit at medium/high loads, but at idle the systems pretty good already. Most idle power is stuff like ram, chipsets and more than cant be undervolted easily.
