Well I think I messed up, I wanted to try and overclock my computer however, I know zero about overclocking, so I went into my bios and enabled AI overclocking, got to my desktop, then it blue screened. Now every time I boot, it will not boot into windows. It immediately asked me to choose my keyboard layout, then some type of troubleshooting screen.(picture listed.)

I have gone into bios and hit F5 to revert to default settings and still will not boot

If you go into advanced options try and just boot through there.

You tried loading default values into your BIOS (or clearing the CMOS memory) ?

Not sure what that means lol but I redownloaded windows on my other hard drive, I think my M.2 SSD that I was booting from is messed up

When you are on the BIOS menu, you have an option to load defaults.

If you can't load defaults, you can remove the CMOS battery on your motherboard. It is a nickel-sized. You just remove it for 5 minutes while your computer is unplugged and then reinsert it and boot your computer. The BIOS defaults should be loaded then.

so i loaded defaults and nothing, so i downloaded windows to my HDD and used that as a boot drive and it works. i can see my old M.2 ssd and it has over 600GB on it and seems to be fine however a lot of my data is ether gone or just not being accessed because i had to redownload a bunch of stuff, ie. chrome, GoXLR software and profiles, discord, etc.  not sure how to even test it

Yes, a dying SSD can cause that issue too.

The first thing is to copy the data you can still access. As for the remainder, you can always try getting an estimate from a data recovery service (some of them are really expensive). If the data can be downloaded again, just don't bother and redownload instead of recovering.
