So i recently sleeved my 24 pin and im wondering how i can tell if i put the cables back in right. The manual only has the diagram for the mobo side and its a strider 1000 watt ST1000-P. I am 90 % sure its done right but i dont want to mess up my system.

Use a voltage meter and change it to the mode where when the two things touch together they create a beep. Forgot the name of it. Just use this function to test if the location of the wires matches.

so test between the power supply and the cable? should the one side be plugged in (cable to mobo/ cable to PSU).

Just put one needle on one location and the other needle on the same location to see it it beeps. If it beeps, it means that it is the same cable. You shouldn't need to plug it in. You are just making sure that the locations of the pins coming from the psu cable are the same as the wire where you plug it into the motherboard?
