Before I start off, I do have to say that despite being a technician, I never gotten around to building a PC, so do excuse my lack of knowledge when it comes to new (post 2017) computer parts. 

Budget (including currency): ~700$ (4000PLN but prices for hardware here can get pretty high so I choose to leave a small buffer)

Country: Poland

Games, programs or workloads that it will be used for:  These two the most: EVE Vanguard (UE5 shooter), RPCS3 (PS3 emulator) and games such as Doom Eternal and GTA V, I don't mind dropping graphics settings, and I mostly get this PC for EVE Vanguard. 
Important detail: I would love to use the Teenage Engineering Computer-1 case, but if it's no longer on sale when I get paid on the 8th March, I am willing to change the plans.

Existing parts draft:
Case: Teenage Engineering Computer-1
CPU: Ryzen 5 5600 (was considering the i5-10400F at first but the prices are similar and Ryzen seems to beat the i5)
GPU: Palit GeForce GTX 1660 SUPER StormX OC 6GB (as it can fit inside the Computer-1 case)
RAM: 16GB minimum, but if it's possible to squeeze in 32GB that'd be amazing.

The i5-10400F and a 1660 SUPER was able to run Vanguard at ultra settings at 768P, in offline mode without any players on the map except for bots. 
Peripherals aren't needed, and I will upgrade my existing mouse and keyboard later on
I do need a 27 inch monitor, at the moment I am considering the Dell S2721H - I use this monitor in Uni and I think it will be fine for my build, therefore I won't be playing at a resolution higher than 1080P at 75Hz

I am upgrading from a Dell 7290 Laptop, with an 8th gen i5, so there's no parts I can re-use. 

I plan to buy the parts within the next 2-3 months.

As I've said in the OG post, not yet, going to buy it on the 8th of March, and I do remain open to other suggestions for cases (and the form factor). 
Both the design and size is what made me consider the TE case.

The only thing is are you confident building computers in that small of a form factor, i understand you might not be up to date on recent pc part knowledge but do you have decent experience in building computers?

1660 is pretty old and weak, try to squeeze a tad more for the GPU and get a 6600 (it is +50% faster), 5600+6600 combo is a real good budget pc

Yes, I work as a technician in a repair shop, I have re-assembled quite a few PCs so it's not a problem. Only problem I have is choosing the right components for this build, as I want to make sure I'm getting something good.

wow, 180mm of gpu space is NOT a lot of free real estate 😅

I dont think any 6600s are under 180mm at a reasonable price
