Off-site backup using RPI

Look into ZFS replication, it’ll do what you want assuming you set up your datasets decently. If not you may need to move data around to be a better architecture. 

I was wondering would it be possible to use a RPI 3 B+ for an off-site backup for the most important files from my main TrueNas Scale server. I was using the RPI as my main ftp/media/plex server using a 4tb external usb drive with external power. I do not want to backup everything just some stuff that I just do not want to lose. Is there a way to do this easily?

Set up zfs under the default raspbian OS for r-pi and use ZFS replication to send backups. You will need a VPN to connect the two together tho, I’d look into WireGuard.
