What would happen if i plug Display port 2.1 into a Display port 1.4 monitor

There will be no benefit to using a 2.1 cable, no.  It will work at the spec that both ports support which will be 1.4.

I have a 7900xtx and a Samsung Neo G8 monitor the 7900xtx supports dp 2.1 but the monitor only supports dp 1.4. I just wanted to know what are the pros and cons of using dp 2.1 on my 1.4 monitor. Thanks!!!

It will work at the 1.4 spec just fine.

The only benefit I see is for you to be able to use that cable with newer stuff in the future. No matter what it will run at DP 1.4

I probably forgot about this comment so quote me if you need a response.
