To answer my own questions, after a lot of research, these are the iPad models that support 4K 60Hz over their USB-C port:

 

1 - iPad - None yet.

 

2 - iPad Air (5th generation) (source: iPad Air (5th generation) - Technical Specifications)

 

3 - iPad Pro 12,9" (3rd gen) (source: iPad Pro (2018) 4K display output - Apple Community)

 

4 - iPad mini - None yet.
