I have an ancient desktop, what parts could/should I reuse

Unfortunately, not much is really usable from that apart from bringing forward the SSD and hard drive. Even then, I'd recommend buying a new 1-2TB SSD boot drive if you can fit it in your budget.

I have a 10~ year old desktop that we use mostly to watch movies, my girlfriend would like to use it for some light gaming (low setting 1080p is ok), not sure what i could/should reuse other than the case

You could get by just upgrading the graphics card to meet the min specs requirements for Baulders Gate 3.

 

If you want to upgrade then you can keep the case, the PSU depending on how power hungry parts you get and the storage drives if still working would work though some what limited storage.
