I assume with this list these are the main power consuming parts for the build. I've currently settled with a CM 850W power supply, judging from various websites the answer seems somewhat broad. With this config would 850W be sufficient? Or should I swap out for a 1000W to be safe. I've overlooked estimated power consumption before I finalized my order. Wouldn't be a problem if i needed to swap though. All comments appreciated.

850W is fine. With that said I would go with a locked cpu for that board such as the i7 13700.

And with that a twin tower 120 to replace the AIO (AG620 ARGB is a good option for the rainbow vomits) which should get us a proper 6000/6400C34/32 kit which would be a nice frametime boost. But beyond that its a pretty good 2000 AUD Intelvidia build.

If the PSU is Tier A or B on https://cultists.network/140/psu-tier-list/ it's fine. Otherwise I'd suggest a rethink of the model. The capacity is fine. Ideally the PSU will have native support for the 12VHPWR connector used by the GPU.

The most power hungry thing in your system is actually the CPU, not the GPU, but still 750W should be plenty for this hardware.
