that ram is pretty terrible for AM5. I would go for a kit of trident Z5 Neo CL28 5600 for only 20-30 euros more

5800X3D is a good option only if you already have older AM4 CPU.

Noctuas are overpriced, save some money on SSD because they make no difference, 30 euros more for 6950XT, 4000X has terrible airflow, Platinum PSUs are a waste of money if under 1200W.

I would recommend the following builds, AAA games usually need more GPU horsepower, value oriented.

Intel option (could be cheaper, worse upgrade path than AMD Ryzen 7000):

https://nl.pcpartpicker.com/list/CszxDq

CPU: Intel Core i5-13600K 3.5 GHz 14-Core Processor  (€334.95 @ Megekko)
CPU Cooler: Deepcool AG620 67.88 CFM CPU Cooler  (€58.85 @ Amazon Netherlands)
Motherboard: Gigabyte B760M GAMING X AX DDR4 Micro ATX LGA1700 Motherboard  (€152.95 @ Megekko)
Memory: PNY XLR8 32 GB (2 x 16 GB) DDR4-3200 CL16 Memory  (€54.95 @ Azerty)
Storage: Crucial P5 Plus 2 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive  (€133.30 @ Amazon Netherlands)
Storage: Crucial P3 2 TB M.2-2280 PCIe 3.0 X4 NVME Solid State Drive  (€87.99 @ Amazon Netherlands)
Video Card: XFX Speedster MERC 319 Radeon RX 6950 XT 16 GB Video Card  (€635.00 @ Amazon Netherlands)
Case: Corsair 4000D Airflow ATX Mid Tower Case  (€89.90 @ Amazon Netherlands)
Power Supply: MSI MPG A850G PCIE5 850 W 80+ Gold Certified Fully Modular ATX Power Supply  (€137.00 @ Amazon Netherlands)
Total: €1684.89

AMD option (better upgrade path):

https://nl.pcpartpicker.com/list/Cywn3y

CPU: AMD Ryzen 7 7700X 4.5 GHz 8-Core Processor  (€328.00 @ Amazon Netherlands)
Motherboard: Gigabyte B650M GAMING X AX Micro ATX AM5 Motherboard  (€184.95 @ Azerty)
Memory: Corsair Vengeance 32 GB (2 x 16 GB) DDR5-6000 CL36 Memory  (€99.90 @ Amazon Netherlands)

Occassionaly visits the forum when I have nothing to do at work.

This is the way. The ONLY thing I'd change is that AM5 motherboard. All those high-end pieces on such a lowly board would be kinda wild, imo. I'd say bump 'em up to a base B650 board and this is Chef's kiss. Intel version, no complaints.

Leonidas Specs: Ryzen 7 5800X3D | AMD 6800 XT Midnight Black | MSI B550 Gaming Plus | Corsair Dominator CL16 3200 MHz  4x8 32GB | be quiet! Silent Base 802

Maximus Specs: Ryzen 7 3700x | AMD 6700 XT Power Color Fighter | Asrock B550M-Itx/AC | Corsair Vengeance CL 16 3200 MHz 2x8 16 GB | Fractal Ridge Case (HTPC)

good point on the mobo. Problem is even the cheapest decent b650 board is 160 euros instead of 130. And you can definitely run a 7800X3D on an a620. If the budget was about 2100 euros then we could get in a decent atx b650 board for sure

Thanks for the very helpful suggestions! As for the motherboard, I don't see 2 x M.2 slots, so when upgrading the motherboard, would the Gigabyte B650M Gaming X AX be a reasonable option?
