Other details: Buying soon, looking at playing games at 1440p with high frame rate and to futureproof the build for the next 3-5 years.

If your budget isn't too constrained and you don't have a special usecase I'd skip the HDD and get another or a bigger SSD. 

mITX is awesome! I regret nothing (apart from when picking parts or have to do maintainance *cough*cough*)

While it's still ok to keep using old hdd drives. For new ones, you really just need to go with ssd. you can simply get 512gb/1tb of ssd with dram for the main drive and a cheaper 2tb ssd. As for your budget, if you really like to max it out. You can go with 4080.  Or you can get 4070 ti, since it's lower or the highest AMD cards. As for CPU, while you can get the non k variant. Whatever amount you save to get an F variant(no igpu), isn't worth it for me. It's still better to have igpu, just in case of troubleshooting in the future.
