You don't actually need to run the cards in Crossfire/SLI for more monitors. You could even run an Nvidia GPU alongside you RX 6600. You only want Crossfire or SLI if you're planning on using both combined for gaming (Which isn't supported in most games).

i would recommend getting some low power card if you only want to add displays since it won't be running anything heavy like games. Just remember to connect your main display to the RX 6600 so it get's the best performance.

If you just need more screens, any other GPU will do, it doesn't need to be the same model. Sticking to AMD to match your current card will probably help with stability but isn't strictly a requirement, and it doesn't matter which board manufacturer (e.g. Asus, Sapphire, XFX) you go with. If all you need is screen real estate for your workflow, and don't care about performance on your extra displays, you could go with an even more budget card like the RX 6400. The second card will not help you get better performance in games however, other than offloading the work of rendering whatever is on the other screens, but the difference will be negligible.

Another tip is if you're getting another AMD card then it needs to have the same driver support as your main card. For example say your second card is R7 240 which is now legacy card, then it may not work if you have latest driver for your RX 6600. Happened to me as my GT 710 didn't work with RTX 2080. But I can install old Nvidia driver for GT 710 while having latest AMD driver for RX 6800 XT as they are different brands and don't conflict each other.
