Nail to the head, any of my criticism would be cost cutting measures to afford more performance in the games. You can run Premiere on 16GB unless if you need to do intensely encoding heavy work like color correction, in which case i wouldnt even go for Radeon, id just go for an RTX 3070Ti at similar pricing as that is CUDA-favored workflow.

Good point - 2tb is a better amount
