So I want to use the Lian Li Uni SL-Infinity Fans as I love the look of them but I can't find any AIO's made by them that use these fans. Could I buy any AIO from any brand and replace the fans?
If yes can fanless AIO's that are cheaper than AIO's that come with fans? Or do I have to sell the fans that come with it?

yes ofc you can do this you just need the correct screws from that aio, but those should come with the aio and make sure your lian li fans are standard width (25mm)

A standalone aio is pretty unusual but yes you will probably have to sell the fans or you could keep using them in your case. How big would your aio be?
