Plex stopped working on all my fire sticks this week. are there any good alternatives that work on pc fire sticks and hopefully iOS

All the ones you can find if you google for Plex alternatives, like Jellyfin. But tbh Plex is the best one by a far margine so maybe you should try to see why it's stopped working and maybe reset your server settings or see what's stopping it. Maybe a firewall, nosy anti-virus,... For a while I just had Net Limiter installed and that app was just messing with my Plex without any input from me for example.

are you running your own server or using someone elses? or are you just using the free plex streams?

I find it unlikely (though not impossible) that this is a plex issue if all of your clients stopped working at the same time.

If you are running a server, did you change any settings recently? update anything?

I am running my own server and it recently updated since then some shows have no sound some won’t play at all and others work perfectly fine

that's strange. did you do any troubleshooting? Or would you rather just dump plex altogether.

If its the latter, Jellyfin is a FOSS alternative, though the UI is lacking IMO, Emby is another closed source option that has a similar licensing scheme as plex.

if its the former you can pull up the video stats on your preferred client where things aren't working and see if it shows you the reason why it is not working.

I’d rather just get rid of plex since I can’t watch shows on iOS for free does Jelly fin have a iOS app

I think so, I don't use it.
