For video editing i recommend getting atlest 1TB of NVME ssd preferably a high speed one if you dont have a nas. and maybe 32Gb ram if you Work as a Editor. maybe a inetl CPU  also for the quick sync but 5600X is a steal right now. and i doubt the gigabyte powersupply is the one that had the blowing up issue but dont quote me on that one.

Everything looks ok, 512GB storage isn't much so I'd get at least 1TB or be mindful of space.

You can get a 5600 to save some money while losing close to nothing, then get a 1TB drive, a safer PSU, and better board

A 6700XT will game much faster than a 3060, tho it'll be worse at video edit, depends on usage, else if you stretch the budget just a bit (40$) get a 3060Ti , which is much better than a 3060

I think the PSU is okay and the mobo is a little expensive but the 3060 ti is a good add on
