Definitely recommend a NVIDIA gpu for the RTX part, and 2TB of m.2 nvme ssd storage so you can store more games without having to uninstall and reinstall so much. I replaced the PSU as well, for a more well known, and newer one. I also went with a Ryzen 7 5700X for a little bit better performance.

https://uk.pcpartpicker.com/list/j48t2m

CPU: AMD Ryzen 7 5700X 3.4 GHz 8-Core Processor  (£188.99 @ Amazon UK)
CPU Cooler: Noctua NH-U12S redux 70.75 CFM CPU Cooler  (£49.95 @ Amazon UK)
Motherboard: Gigabyte B550 AORUS ELITE AX V2 ATX AM4 Motherboard  (£138.99 @ Technextday)
Memory: Corsair Vengeance LPX 16 GB (2 x 8 GB) DDR4-3200 CL16 Memory  (£49.98 @ Scan.co.uk)
Storage: Western Digital Blue SN570 2 TB M.2-2280 PCIe 3.0 X4 NVME Solid State Drive  (£128.47 @ Amazon UK)
Video Card: Gigabyte GAMING OC Rev 2.0 GeForce RTX 3070 LHR 8 GB Video Card  (£593.99 @ Newegg UK)
Case: Montech X3 Mesh ATX Mid Tower Case  (£54.99 @ CCL Computers)
Power Supply: Corsair CX750M (2021) 750 W 80+ Bronze Certified Semi-modular ATX Power Supply  (£68.13 @ Technextday)
Monitor: Gigabyte ‎G24F 23.8" 1920 x 1080 170 Hz Monitor  (£159.98 @ Scan.co.uk)
Custom: Redragon K552 60% Mechanical Gaming Keyboard LED Rainbow Backlit Wired with Red Switches Cherry MX Equivalent for Windows Gaming PC UK QWERTY (White)  (£39.99 @ Amazon UK)
£1473.46

A few notes on this:

  • The 5700x is a decent value, but I wouldn't worry about core count till a faster GPU is being used, especially in a strictly gaming computer.  The 5700x is only 30 pounds more than the 5600x, but the 5600 non-x is only 130, which is what OP should have used in the first place, placing a 60 pound premium on the last 2 cores that won't get used much.  The 5600 and 5600x are the same CPU, IDK why I keep seeing the x in parts lists when it's consistently more expensive for identical performance
  • The NH12 is a weak cooler for 50 pounds.  You can get equivalent coolers for less or better coolers at price point.  The ak400 and ag400 are both available for 33 pounds and match the nh12 in noise and cooling.  And the ag400 has RGB lights to match an rgb case..
  • 32GB of 3200MHz RAM is easy with this budget.  20 pounds more....  You can also get 32GB of 3600MHZ RAM for another 7 pounds to match the infiinity fabric and it has RGB Lighting: Lexar Hades 32GB Kit (16GBx2) RGB LED Lightning, DDR4 3600 MHz DRAM Desktop Memory for Gaming (LD4BU016G-R3600UDLH): Amazon.co.uk: Computers & Accessories
  • The SN750 is overpriced for a DRAMless gen 3 drive when dramless gen 4s are significantly less
  • The 3070 for 600 pounds feels lame when faster cards are only a little more, and a 6700xt is a lot less
  • The fans in that case are not addressable, they just do their own thing.
  • The PSU is fine, but stepping up to a 6800xt would probably call for something a little better, and 105 pounds for the rm850 is a pretty good deal that would allow for as much boosting as OP ever wanted.
  • Buying a 1080p monitor for a new gaming PC in 2023 feels a bit weak

The 5600 is plenty.  It's identical in performance to the 5600x, just different factory base clock, which you can adjust in the BIOS or just leave it, it's already more than fast enough, and auto-boost will raise the freq when it needs to, and save power and heat when it doesn't.

would 1440p be a good idea?

Yeah.  I would not spend like this for 1080p anymore.  The higher pixel density is SOOOO worth it, and it's not much more expensive.  You can do a parts list (like the one above) with a 6800xt and a 1440p 165Hz monitor easily with this budget.  The red devil is a very good cooler and the lights on it are pretty neat.

Also, IDK if you found a peerless assassin for 40 pounds, if so, go for it.  But the 5600 really only needs a basic cooler, the ak400 for 33 pounds is plenty if you don't have a PA120 for 40 pounds like that.  This cooler is also plenty for the 5600 and it's like 20 pounds: ID-COOLING SE-214-XT 68.2 CFM CPU Cooler (SE-214-XT ARGB) - PCPartPicker, but the ag400/ak400 is a little better than it.

Did you want a white keyboard with a black case and black monitor?  There are white cases and monitors you could go with too if you were looking for that aesthetic, or that keyboard also comes in black.  The case was also out of stock 😞, but if you can find it locally it's a good case (airhawk duo, not the montech one.  I think the montech one doesn't actually let you control the lights IIRC, but I could be wrong).

Some other cases you might like if that airhawk is out of stock or you don't like the one I found that was similar to it:

KOLINK OBSERVATORY LITE MESH RGB ATX Mid Tower Case (OBSERVATORY LITE MESH) - PCPartPicker

MagniumGear Neo G ATX Mid Tower Case (MG-NE520G_BK01) - PCPartPicker

Aerocool Aero One Eclipse ATX Mid Tower Case (ACCM-PB17143.21) - PCPartPicker

Cougar MX430 Air RGB ATX Mid Tower Case (CGR-51C6B-AIR-RGB) - PCPartPicker

Antec NX410 ATX Mid Tower Case (0-761345-81041-8) - PCPartPicker

Budget (including currency): £1500 including peripherals, but I already have a mouse and a mouse mat!

Country: United Kingdom

Games, programs or workloads that it will be used for: Minecraft, Minecraft RTX, CS:GO, but I would like to be able to try some new games!

I am going to be upgrading from my OLED ASUS VivoBook 15 with Ryzen 7 5800U, which I got as a gift.

Here are my existing parts lists, I am mostly asking for help on which one is better, as I am not sure which CPU should be paired with an rx6800, also would 1440p be a good idea? Any help would be greatly appreciated!

I am mostly looking for good value, not just the best PC for £1500

Exciting that you're building your first pc!

If you care alot about minecraft ray tracing, the nvidia cards are better in this regard (despite the rx6800 being awesome for normal rasterization!).

Id say the 5600x won't bottleneck you for the most part and you can save a nice amount going this way but with the crazy framerates you'll want in cs:go this can rely on the cpu more.

I personally would go for a more reputable PSU manufacturer as the price difference isn't crazy.

Value is hard for other people to gauge for you, but you're on the right track!

I was talking about Minecraft Java RTX, which is not ray traced, the reason that people say Nvidia is better for Minecraft, is because previously AMD had really bad support for Open GL, which caused stuttering. this was mostly fixed in a driver update from July 2022
