What GPU for older system?

Hey guys, 

could use some advice on GPU upgrade. 

My current system is 

CPU Intel Core i7-8700K

MB ASUS ROG STRIX Z370-E GAMING

RAM 2x 8GB G.Skill F4-3200C16

GPU ASUS ROG STRIX GTX 1060

Power supply 700W

I am a gamer, but actually play oldish games (just recently finished Days Gone, still keep playing Cities Skylines, games like Satisfactory or Horizon Zero Dawn), and don't have a problem playing those games in full HD on my 4k monitor, so GPU is not a big problem, but I still noticed it maxing out on some and slowing everything down.

So my question is, is there a reasonable way for me to upgrade GPU only, without having to go and invest in everything else? Don't want to buy a new GPU just to find out that now the rest of the system is bottleneck. If so, what do you think would be reasonable choice (don't care about nVidia or AMD)? Is there anything else I should really consider?

I feel like an 8700K is still good enough that it shouldn't bottleneck most modern graphics cards. I might be inclined to look for an RTX 2080 or RTX 3070.

 

I'd also recommend you upgrade the PSU and GPU in one go, if you're able.

Thanks Dragon for your help, I hoped this would be the case. I will be upgrading some (like I need new primary HDD, I also contemplate going 32GB RAM), so I might take new power supply with it...
