Fan setup and GPU power cables

for the gpu cables, it should be fine to have them route over the top of the card. although i would try to have them not touch the backplate. I have mine run over the top and pulled so that they help with gpu sag.

for the aio, if youre putting it at the top of the case I would have them push air out of the case, with your front fans pulling into the case. this would help keeping the flow similar to natural convection so that your fans arent having to fight the flow

Cables touching the backplate are fine, it's not hot enough to bother the sleeving.  Sure it's hot to touch but cable sleeves can handle much more.

 

Top mounted AIO is usually push exhaust.  In front and bottom, out at top and back is the standard.  Obviously it can depend on case or whatever you want to do.
