I know there are AIOs with screens on them which you can put very small animations/images on, but I've never heard of it being a full on monitor. How do you know it works as a monitor? Are there ports or something, or did they actually show it off being used as a monitor? I'm just curious how that'd even work.

Really intriguing.

Keep in mind that I am sometimes wrong, so please correct me if you believe this is the case!

I once used an Acer AIO with a HDMI in port. It was a hit and miss using it as a monitor. Cool to see Dell implementing HDMI in ports with a dedicated Monitor Mode Switch (on the Inspiron at least).
