Get sleeving in between 3mm and 4mm if going with plastic sleeving, 4mm plastic sleeving is the best size to possibly get. Paracord sleeving only comes is one size which is  Approximately 5/32" in Diameter.

Do you happen to know if I have to make my own extensions or can I sleeve the cables included with the PSU or is that impossible? (never build a PC and know nothing about PSU's)

You can use the existing cables that came with your PSU. I personally would do it that way, it will take a little longer but the end result is so much better.
