Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 
Upgrading from 1060 6GB GPU, i7 8700, 16gb RAM (can't find which type), 128gb ssd and 1tb hdd. And for some reason it has a dvd drive... should I ditch it?.

I've been thinking of upgrading to a 3060 or 3070, but I don't know if my CPU can handle it, same with the motherboard. I'll try to get some more information on it

I haven't thought much about AMD because I know very little about it. If there are some recommendations for AMD because they are a lot better I will take them into account.

Your CPu could handle a 6700xt or 3070 pretty well.  At 1440p it'd be ok with a 6800xt or 3080.

 

eBay is great for GPUs right now, but if you need new these would be fine.  What model PSU do you have?
