What does the mean? (complete beginner)

This warning is just letting you know that the BIOS version that is installed on this motherboard may not be the most up-to-date that supports the 5600X processor. As a result, you may have to use an older CPU, such as one from the Ryzen 3000 series or a loaner from AMD...or also get the newer BIOS flashed to the motherboard. 

 

Since B550 has been out for awhile now and the 5600X, you shouldn't really have an issue at all and if the stock is fresh, will come with a newer BIOS version installed already.

So should I just go ahead and stick to this CPU? or switch to the a CPU from the Ryzen 3000 series just in case?

No I would stick to this CPU as the IPC gains are worth it and not hassle with returning/buying.

Unfortunately, no. Some tags on the box will tell you when you get the motherboard what BIOS revision it is. Then you can check on the motherboard's support page at the CPU support page to see what BIOS revision a processor is first supported by.

This review on amazon said "Ordered mine earlier this month, wanted to note that (at least for me) it still did not ship 5000 ready. Worry not, however; The BIOS flashback button did the trick flawlessly! It was really easy to find instructions for and perform, and did not require a 3000 CPU."  Is this something that i'll be able to do if it ends up not being compatible?

Yes, you're able to do this on certain motherboards (I wasn't able to confirm this on the motherboard page but was thinking that it may as ASUS has their EZ Flash 3 which allows for this) and luckily this motherboard has that feature. All you'll need is a USB flash drive to download the BIOS onto and then insert in the BIOS flash USB port on the rear I/O of the motherboard.

Great, if it's alright can you send me a video I can use for may that be the case when I end up getting the motherboard?  If not that's alright, thanks for clearing this up for me.
