As for the 7870 specifically, GPU Review has a nice table of the overclocks that testers achieved when the card first came out:

They are using the MSI Hawk edition 7870, but if you cut back on the overclock just a bit (say 10 - 15 percent) and slowly build from that, you should find what works for you. Make sure you test for stability at every step. As long as your temps stay under about 80 - 85C under full load you should be good, but lower is better. Some cards just don't overclock very well. I have two MSI 7870 Hawks in Crossfire and have yet to find a stable overclock of any significance. Since they give me plenty of power as they are, I just leave them at the stock OC. It happens sometimes.

 

Remember that many manufacturers do not warranty damage caused by overclocking, but usually they have no way of knowing anyway. Good luck.
