If you have the money yeah, and you aren't sacrificing PC parts to do it so I say yes.

Money is still a big factor, but if I keep saving for it I will eventually have enough. My only worry is that I might grow out of the whole gaming thing and move on to something different, or I might not. I still think it would be really cool now, but maybe not in a couple of years. I'm not quite sure what to do.

Hmm. Even if you do, just having/setting it up is worth it. To me at least.

Definitely aio, 2 780Tis are a lot more powerful and you won't have a lot of maintenance if any

I put mine on the back of my motherboard tray with velcro.

Get a small PSU if you aren't doing SLI.

Do you really need 780 Ti SLI? Because that would obviously be a lot more power, but it sounds like you would really like a custom loop. Go with the custom loop.
