A gtx 770 will be enough to play on max settings in most cases.

But if you can afford to spend the extra 100+, go for the 780.

780, more power and you can actually play triple a games in ultra at 1080p

I can run triple A games on ultra at 1080p with my 680 (flashed to 770) without any problems.

It depends on what you want to play but some of the higher end games push 2GB VRAM to it's limits. Go with the ASUS GTX 780 DCUII http://www.amazon.com/gp/product/B00DWV3NM6 and you won't have to worry about getting another card for at least another two years if you continue at 1080p.

I'm unsure whether to pick the gtx 770 for 1080p gaming or a 780. Help?

Do your research.  Check benchmarks that compare games at the resolutions you intend to use.  Everyone has an opinion, go look at something scientific.
