I won't buy the 3 SSD's, just don't know yet whether I buy the single 2TB or 2x 1TB. Price difference in switzerland is 30.- (221.- for 2TB, 251.- for 2x 1TB). Cooler and GPU are bought already. I'm mostly still confused about RAM and storage (could also be different SSDs). However prices here vary from US. If you want to check prices, I'm mostly buying from digitec.ch (prices get at best 10% lower than there, so it's a good indication).

I will go with a single 2TB drive so you have more space to upgrade in the future

Thanks I'll check the other MB out, but prices here are very different for mainboard and SSD. I forgot to mention this part. But yeah, the mainboard that I linked (Gigabyte Z690 UD DDR4 ATX LGA1700 Motherboard) is at 140.- whilst I can get the MSI one only for 200.-

For SSD it's even worse, I was suggested the crucial P5 before already, but cheapest I can find it here (for 2TB version) is 300.- whilst the Samsung 970 Evo Plus is 220.- (also 2TB)

Maybe a Kingston NV1 2TB for 160.- though I don't know any reviews about that one.
