GPU for HP DL360e gen8

What do you need the GPU to do, exactly? a P2000 is roughly a GTX 1060 (3 GB core), while a T600 is lower performance than a GTX 1650.

I've been looking for a GPU to put into my server, from now on I've found 3 options: 
PNY Quadro P2000 for 570 Euros 
PNY T600 for 280 Euros
Lenovo T600 for 234 Euros

Problem is, at this point I realy do not know what to look for. Why is there such a price change (I mean except for build quality) and is the quadro really what I need for a safe pick ?
or can I easely go for the T600 without having to worry about later installation issues cuz of server installation.

in short: 
- What do I need to look for (just to educate myself ^-^)
- What option is good or do you have any other suggestions ?

Mainly for a remote desktop (all kind of use are planned on it (exept hardocre gaming) but like everything from small video editing, to programming) or/and video transcoding for my plex media server
