How much performance would I not get, with a Ryzen 2700x and either a 3070 or 6700xt GPU?

Im selling a PC i put together with the CPU and GPU from my previous build, and with the money from that sale I plan to upgrade my current system. My 1080ti seemingly sucks ass for no apparent reason (whole other post I made and I cannot work it out, its just crap). Red Dead 2, at 1440p on the third graphics preset slider thingie for Favour Performance, I get 70fps average. I see other 1080s getting the same FPS count, at ULTRA settings.

But after I sell the other PC Will be left with £950, there are some GPUs under that price that I could get (so long as they dont go up by much near December). And id have to save up for a few months to get a new CPU, so how much performance would be left out by nor upgrading my 2700x?

I play at 1440p 100fps/hz in Red Dead 2, GTA V, Minecraft, Wreckfest, Dirt Rally, Cities Skylines and Planet Coaster.

Current Specs:

R7 2700x

GTX 1080ti (underperforms)

16gb DDR4 3000 speed

750w 80+ Gold PSU

3440x1440 100hz AOC monitor

J2C just did a tutorial vid last month, you can look it up.

A 1080TI is still a very solid GPU.  I'd try to fix software issues before dropping the $$$ for a middling upgrade.

Ok so i DDUed it and nothing changed. Still the same shitty FPS at the same settings.
