I'm thinking of getting a discrete graphics card (not at the moment but when I do) I'm wondering whether or not I will be able to use the igpu on my ryzen 5 3400g for anything? Specifically for video encoding such as screen recording. If I could, then would anyone link me a video/article on how?

If you get a Nvidia GTX card, then you will be better off with encoding with that, because it has NVENC encoding

Is there a benefit to NVENC besides being faster?

Quality. May be slower though, really depends on the card.

Is a GTX1050 good enough in this crazy market?  Don’t want to contribute to the problem and pay 600 for a 3060.

Would it be possible to use the vega 11 igpu for encoding? I know it wouldn't be as good a quality but if possible could take the load off the discrete gpu?

If the program and type of encoding is supported, sure. But theres no downside to using the gpu encoder as it goes unused otherwise. Really comes down to the card or the actual use.

Would this just be as simple as switching the encoder from NVENC to the AMD encoder?

Yes, you just select it via the program.
