First of all, hope I'm in the right forum for this.

I'm looking for a new cpu and mobo for my workplace. What I'm looking for in particular is something that can handle the stress of having a video games up and several other software's running at the same time, along with workload (editing & rendering, etc).

My current cpu is Intel i7-7770k 4,20ghz, and my eyes currently at AMD Ryzen 5 5600X and AMD Ryzen 9 5900X (although 5900x sounds a bit overkill to me).

Finding the right CPU can definitely help out in a general direction for mobo's, but any recommendations on mobo's are also appreciated.

If you're wanting to game while your PC renders in the background, I'd say a 5900X is about the baseline.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.

You may want to go for the 3700X instead, or even the 3900X. The reduced price over the 5000 series will give you more room in your budget, to upgrade your other components.
