So I didn't have enough sata power cables for my drives so I got a type 4 sata to PSU cable. However, when I plugged the cable in, my my PC would light up for a split second before going off again and would not power on again. When I tried a different outlet, it powered on again for a split second then going off again. When I unplugged the sata to PSU cable, my PC started working fine again. At the time I still didn't realize so I repeated this process a couple of times. Then I finally realized that it was because the sata to PSU cable was incompatible with my PSU. I read somewhere that using incompatible cables with your PSU and turning on the PC may fry the PSU, so I am just wondering if my PSU is fine. (It is working right now and it is a Corsair AX850 80 plus Gold).

You have no idea how massively you lucked out here. Mainly because of the protections built in to the ax850 to prevent exactly this. This could have easily killed the psu and more.

Let this be a lesson and ALWAYS get the EXACT CABLES FOR THE EXACT PSU.

If it's working fine now it's probably fine as it most likely shut off before it went totally wrong.

Yea, sorry I am new to PC stuff and did not know PSUs had compatible vs incompatible cables.

Would something like this be ok?

Those would be fine, but only if that cable is connected to an original SATA power cable from your PSU. Also I suggest checking the Corsair shop for original compatible cables, only if they still have them for the older AX850 model.
