... on my MSI X470 Gaming Pro (7B79-001R); have I missed something obvious...?  I managed to find TPM & enable that... so I wouldn't really say that I haven't looked for it.

As a side note, is the switch from "Legacy & UEFI" to "UEFI" likely to require a full Windows reinstall, as it doesn't seem that UEFI allows for my m.2 to be seen as a primary boot device (currently).

 

If getting a newer 'board would be easier, where should the feature set of the current board steer me, with an outside likelihood of a 5800X as a future upgrade...?

Did you test boot it, before you built in into the case?

Advanced BIOS > Settings > Windows OS Configuration > Secure Boot

 

Requires "Windows 10 WHQL Support" to be enabled.

Main: AMD Ryzen 7 5800X3D, Nvidia GTX 1080 Ti, 16 GB 4400 MHz DDR4 Linux - Fedora

No, you can convert your install to support uefi
