I think it would be better to prefer cores over threads so a 3500x might be a slightly better option as inside each CPU core, the multiple threads execution units have to share some single resources whereas, having just more single cores, only 1 thread execution unit each doesnt need to share with anything else

From what I can see the 3300X beats the 3500X in everything, both gaming and productivity.
