Data migration

Currently in the process of building a new pc for my wife and upgrading hardware, her old pc ran on sata ssd and the new pc has m.2 nvme drives. 

The new system has Windows already installed, my question is, how can I migrate her current ssd data files over to the new ssd in the new build without cloning the OS in the process? 

Is it as simple as connecting the old sata ssd and copying and paste the existing files to the new drive? 

Ive looked at aomei but all this programs require you to format the destination drive.

Any advice or help is appreciated
