As long as the M.2s have heatsinks which the MP600 has one, you should be fine. 41C at idle is normal for a CPU.

Yup.

Probably won't match other people exactly, as your cooling setup and ambient temperature are different.

I took of the heatsink on the MP600 and placed it underneath the motherboards built-in m.2 heat spreader. Is that alright?

Yeah, thats fine. As long as it has SOME kind of heat disserpation, its ok
