And about which one well The V2 is much lighter (82g), more costly and can get to 20000 dpi, if you really are into high speed, cursors and more buttons (8), you can take it (Too fast is uncomfortable for me tbh im still at 4000dpi) 
The DeathAdder Essential is the cheapest, 5 buttons and provide a solid 6400 dpi for a weight just under 100g (96g). From the 3, probably the best bang for the buck since you dont really need to get a cursor way too fast anyway (still personnal feeling)
The DeathAdder Chroma is between the two other mouses with Dpi which can go to 10000 and 5 buttons, but it is the heaviest of the 3 (105g). As i said, if you're into high speed cursor movements but not over 10000dpi you can take this one.

I don't know what kind of person you are but from my personal experience, getting over 4000dpi is already too fast for me, so paying extras just to get dpi over that value i wouldnt recommend, so basically i would have choose the Essential one. However i don't really like rzer products since they seems more into premium product feeling than durability.
