Games, programs or workloads that it will be used for: MSFS (VR), DCS (VR), VTOL VR, Warzone, Tarkov, Division 2 etc 

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc):  I currently have 2 monitors and an HP Reverb G2 I  use for my VR games.  I currently have quite a bit of jitter and looking to get the most bang for the buck in especially my VR flightsims.

 

Current Rig:  Ryzen 7 1700, 16GB ram, RTX 2080, 128GB SSD OS drive and 2x 500GB SSD gaming drives. 

 

Question: For $1000 USD, Should I update to a new RTX 3080 or if I should look at getting a newer Ryzen 5 5600 with new memory, mobo and an M.2 drive etc?  Currently my rig runs everything pretty well except flightsim which is jittery.  I believe the video card is more of the bottleneck than the processor and RAM but would love some guidance.
